Nonmeat Ingredients and Additives

چکیده
“Food additives” is a general term referring to anything added to food to achieve specific functions, for example, to aid in food processing, to increase the product’s nutritive value, to enhance the product’s palatability through regulating its physicochemical properties, and to extend the product’s storage stability. In muscle food processing, both synthetic and natural, generally recognized as safe (GRAS) chemical compounds and ingredients are used as functional nonmeat additives to assure quality and safety of finished products. The main ingredients in a typical meat product are raw muscle and fat. Nonmeat ingredients include a variety of additives that are small molecules (salt, phosphate, antioxidant, and antimicrobial compounds present in plant-derived spices and seasoning, etc.) or large molecules (starch, gums, nonmuscle proteins, etc.). All these additives can be referred to as chemical ingredients (Table 33.1). Nonmuscle proteins and protein hydrolysates (peptides), such as, soy protein, soy protein hydrolysate, and sodium caseinate, are used in meat processing to improve textural characteristics and water-binding capacity in finished products. Common small ingredients influence meat product quality through interaction with proteins and lipids in meat processing. Examples include monobasic salts (NaCl, KCl, etc.), divalent cationic salts (CaCl2, MgCl2, etc.), various alkali and acid compounds, and different phosphates. Lipid and nonlipid free radicals, which are commonly generated in meat processing, can also have a profound impact on the quality of meats because they not only cause off-flavors but also impair products’ texture by reducing muscle protein functionality. To control oxidation, antioxidant compounds are widely used. Moreover, the cross-linking enzyme microbial transglutaminase (MTGase) is beneficial in improving gelling properties of muscle proteins under both lowand high-salt conditions and has been used in the manufacture of restructured meatloaves, meatballs, steaks, and nuggets. Effect of Non-Meat Ingredients as an Aid to Shelf-Life
Throughout history, the meat industry has utilized nonmeat ingredients to extend or aid in the shelf-life of products. The classic use of salt and/or nitrites to control and limit microbiological growth and to provide flavor stability during storage has provided needed “insurance” for meat product shelf-life. Currently, consumers’ concern for food safety continues to make methods of extending m...
متن کاملMeasurement of Acid-Binding Capacity for Poultry Feedstuffsin Deionized and Magnetized Water
Acid-binding capacity (ABC) of a feed is the amount of acid required to reduce the pH of feed to a special level such as 3. All poultry feed ingredients used in this study were collected from feed mills in Iran. The pH and ABC were determined using the standard methods in deionized and magnetized water at room and body temperatures. The pH of most feed ingredients was raised in magnetized water...

In the present study, the effect of banana peel and bagasse particle additives on the friction and wear behavior of multi-ingredient friction material nanocomposites have been investigated. In order to develop optimized properties of friction nanocomposite, the type and content of natural additives were changed beside the constant amount of other constituents such as alumina nanoparticle and ot...
متن کاملAuthorization and Toxicity of Veterinary Drugs and Plant Protection Products: Residues of the Active Ingredients in Food and Feed and Toxicity Problems Related to Adjuvants
Chemical substances applied in animal husbandry or veterinary medicine and in crop protection represent substantial environmental loads, and their residues occur in food and feed products. Product approval is governed differently in these two sectors in the European Union (EU), and the occurrence of veterinary drug (VD) and pesticide residues indicated by contamination notification cases in the...
متن کاملChemicals used as disinfectants: active ingredients and enhancing additives.
Active ingredients used in microbiocidal products in the European Union constitute some 250 chemical entities. Approximately 100 of these chemicals are commonly used in disinfectant products. The majority of these substances may be classified into distinct chemical groupings. A brief review of the chemical, physical and microbiological properties of each group is given, together with some indic...
